Little help please 
 
 
I just finished off my keg of Russian XXX Stout... i need a new direction   
What to make next?  The IPA is my own recipe, its very good... but the others are all new to me, never before attempted!!!
 
So far this year i have made the Russioan stout, and the triple IPA.. they wont be done in time for St Pat's, but for JIBE... i might save a few   
(pic related... last of the XXX Russian.... please disregard the finger prints lol)

I like honey ale. But only to a point then you gotta switch to something less "sweet". Really makes for a bad hangover if I get to happy on only honey
ale. You ever think of brewing up something with chillies???  Might be interesting to say the least.

Im working on a 100 proof pepper "schnapps"  I was going to use ghost peppers, but my trinidads just put on some blossoms... Might just use those

May have a cinnamon base, with a punch of blister hot pepper.... Im torn between coloring it or leaving it clear, and whether to blend the pepper in,
or just leave one floating in the bottle

I just made a dark honey, but honey malt not bee honey.  It's a good split down the middle.  I only fermented it to 20 on purpose, but next time I'd
take 1/4 of the honey out, add that in biscuit and ferment to 14-ish.

Honey ale it is.... Never done it before... Im going to try and make it less sweet, more crisp, and a good %..... What could I add to  crisp it up,
apple maybe? Pink ladys are in season right now (favorite apple) hmmmm... 
And im all out of my other stuff.. So I gotta break out the 20 gallon fermenter for that... Should be ready just in time for some trinidads.... And

marris otter crisp...? and keep out any fats, oils, and low protein content.   Apple?  I think (based on my experiments) that will ferment funny. 
Though you could make some dry cider and blend the beer with the cider before bottling/kegging.
