To be honest the make and model of kite and board is not going to be very important until you get onto doing advanced stuff.
You want a fairly big board around 140cm and a medium to low aspect (width) kite.
The Spark will be fine.
The kite should be designed for "Freeride" - which means it will be an all round kite good for speed, jumps & wave riding but not exceptional at
any discipline.

What's more impotant to get right is the size (or sizes) you get. I started on a 12m (I weigh the same as you) but quckly found there were so many 20
knot + days that i needed a 9m. I use the 9 way more than the 12 now.
I would get a 12 & a 9 if you can. If you can only get one then it depends how much wind you get. If I did it all again I would start with a 9m
because i get lots of 9m weather and kite surfing is most fun in these conditions. If you are regularly going to have to ride in less than 20mph then
get a 12.
You could compramise and get a size in between 10, 10.5, or 11 which would give you a good middle wind range but i can't really comment as i have not
used kites of these sizes yet.
