any snowboard will do the job, but 2 things you want to get:

1) a low sidecut (long carv radius, ex:20m)

mostly because of:
while snowkiting, you don't carve

while snowkiting, you will most of the time be edging
on the heels, a low sidecut=more edge in contact with
ground

more edge with the ground, less pain in your calves
after a few hours of kiting

2) twin tip (or almost twin tip) to go both ways. A real twin tip is very expensive

Now you can buy a board just for snowkiting like a Nobile, Best, etc.. Some brands available now, there is a market for that but they are expensive

As for me, I bought a clearout brand new beginner board with low sidecut for 125$. It well does the job, and it's cheap. It is quite flexible (soft).

Don't forget that you might snowkite fields where there could be uncovered ground sposts, or ice, and you board may get damaged faster than on the moutain.

For the bindings and boots, I bought step-in ones for 50$ shipped on ebay. Easy to clip-in and out.

If you prefer normal bindings, go with flow. still easy to put on

I am also new to Kiting. Wondering if anyone has tried or know someone who has tried using a snowskate (skateboard for snow)? I was wondering if this would be any easier or harder to learn on?

no bindings, so how do you edge on the heels to keep your balance with the power of the kite.

for sure you can go downwind, not sure you'll go upwind

on water, when kiters go strapless on a surf board, they use wax so the feet stick to the board.
