At 1:25 I can see the kite's design with the highest aspect ratio I've seen on a kite...:o

That is a looong narrow width kite.

I wonder at what point( aspect ratio) you would start to get diminished returns on power/flight..?

I think, the Peter Lynn AeroV2 has an average aspect ratio for a racekite. I dont care about data, but I am sure there are some other kites with a higher AR, like Flysurfer Race and VMG or PKD Inferno.
