take one pound of Black Peppered bacon. trim fat, cut into 2-3" strips.
get 12" cast iron pan searing hot and cook bacon on side burner of well loved and used BBQ.
remove bacon at medium rare. Dice into smaller bits.
add mushrooms to bacon fat for 1 minute tossing gently
add ~2 pound of jumbo ~10-15 count scallops cut in half or 1/4'd......nibble bits same size as the bacon and mushrooms...........The Cook must drink
beer or Gin and tonic while cooking on BBQ... burp.
toss and sear the "stuff" ~3-4 minutes MAX. DON'T over cook them or dry this dish out. Quick hot and sear is good.
I didn't do it this time, but a splash of White Wine wouldn't hurt at the middle-end of the sear.

Beef Shortribs w/pancetta and baby bella mushrooms. Israeli couscous w/toasted pine nuts.
Broiled Pork chops w/sweet n sour peppers and Herb roasted taters
Herb roasted pork loin w/ apple ginger chutney and smashed sweet potatoes
Roasted boneless leg of lamb

(Star Anise was actually my least favourite out of this lot!) Well, I do still have a Tupperware box full in the freezer.. Unfortunately they need to
stay refrigerated, preferably frozen, so not sure they would last the journey!

I am a steak and potato guy, but have to admit the "taste of the area" on the Tour has opened a few doors that are cool to my grandsons. Grandma, my
wife, sent a few pictures to the grandkids, a few of them included frog legs, crawfish, and alligator. She said she liked the alligator the best with
crawfish second. (we have a restaurant here in Seattle that will cover the table with butcher paper and dump a huge pot of Alaska crablegs of all
types, potatos, corn, sausage, clams and muscles, and you get a towel, hammer, and a skinny 2 prong fork to eat with.)
At Crawfish Town USA, the 4lb crawfish order was delivered on 24" bowl with a bucket for the uneatables, thanks kitemaker Susan for the wonderful
restaurant and good time.
Now the Texas BBQ is a different world altogether. Still picken meat out
of my teeth and trying to get the sauce off my mustache Think I am hungry
again......
